Dallas Pitmaster Tim McLaughlin has assembled the best of Texas BBQ in these three unique creations.  The trio starts with Crossbuck’s traditional Texas-style brisket – similar to, but slightly improved over the ones that made him famous.  He then adds in Crossbuck’s Brisket Candy™- Tim’s homage to Kansas City burnt ends but with a Texas Twist, before completing the trio Crossbuck’s house-recipe sausage featuring all fresh ingredients including fresh, smoked poblano peppers.

Texas Style Smoked Brisket

Our Famed Pitmaster builds on his 15 years of brisket smoking experience to deliver a smoked brisket with the perfect combination of tender, smoky flavor and a crisp “sugar cookie crust.”  No wrapping or steaming, Crossbuck brisket is cooked low n’ slow over a blend of post oak, hickory and fruit wood for a truly Texas taste.

Brisket Candy™ (Burnt Ends)

Kansas City may be the home of burnt ends, but Texas is the brisket capital of the World.  So to honor KC, but with a Texas twist, Tim and his team of pitmasters created a one-of-a-kind burnt end which we affectionately call Brisket Candy™. 

Crossbuck House Sausage

For Crossbuck’s Texas Style Sausage, our fine dining chef, turned famed pitmaster wanted to stray from the practice of using yesterday’s scraps in the sausage to a recipe featuring Fresh, Natural ingredients.  He got rid of the gooey cheese, replaced the jalapeño with smoked poblano peppers and packed it all in an all-natural casing before smoking to perfection.

 

Texas Trio Sampler: 

    • Texas Style Smoked Brisket: 1 lb.
    • Brisket Candy™ (Burnt Ends): 1lb.
    • Crossbuck House Sausage: 1 lb.

 

Texas Trio Party Pack: 

    • Texas Style Smoked Brisket: 5 lb. half brisket 
    • Brisket Candy™ (Burnt Ends): 1lb.

Texas Trio Feast: 

    • Texas Style Smoked Brisket: 10 lb. Whole Brisket

Each product is individually packed in a vacuum sealed bag that locks in the flavor. 

Shipping Info

    • The vacuum sealed packages are wrapped in butcher paper, surrounded by ice packs and placed in boxes with insulated liners.
    • To avoid the risks of the meats sitting in a warehouse over the weekend, we ship Monday - Tuesday and typically process orders within 1 business day. 

Heating:

Note: Do not puncture or open vacuum sealed packaging. Meat will be heated in packaging.

1-2 lb. Packages

  1. Preheat oven to 350 degrees
  2. Put 1-2 packages in a baking dish (baking dish should be filled with 2 inches of water with packages)
  3. Loosely cover with foil
  4. Heat for 30-45 minutes or until an internal temperature of 165 degrees is reached
  5. Remove from oven, uncover, and remove the bag (very carefully) from the pan
  6. Allow the product to rest for 5 minutes*
  7. Open Bag and Enjoy!

 

*If product came with a seasoning packet, after resting for 5 minutes, place the meat into a clean baking dish. Sprinkle the entire contents of the seasoning packet onto the meat. Bake uncovered for 10 minutes. Take out and let it rest for 10 minutes. Now, it is ready to enjoy.*

 

3-7 lb. Packages

  1. Preheat oven to 350 degrees
  2. Put package in a baking dish (baking dish should be filled with 2 inches of water with packages)
  3. Loosely cover with foil
  4. Heat for 60-75 minutes or until an internal temperature of 165 degrees is reached
  5. Remove from oven, uncover, and remove the bag (very carefully) from the pan
  6. Allow the product to rest for 15 minutes
  7. Open Bag and Enjoy!

 

10-12 lb. Package: Whole Brisket

  1. Preheat oven to 350 degrees
  2. Put package in a baking dish (baking dish should be filled with 2 inches of water with packages)
  3. Loosely cover with foil
  4. Heat for two hours or until an internal temperature of 165 degrees is reached
  5. Remove from oven, uncover, and remove the bag (very carefully) from the pan
  6. Allow the product to rest for 25 minutes
  7. Open Bag and Enjoy!

 

Storage:

Items need to go into either the fridge to thaw for consumption within 7 days or into the freezer for up to 9 months.

    We followed the reheating instructions and everything was amazing. The family loved the brisket candy and the sliced brisket and sausage were also hits. For someone who loves to cook, this was the easiest BBQ I've ever served—and, again, it was AMAZING!

    Tough Choices...

    I miss Texas so much so when I received my Texas Trio I was so excited. The only question was what to have first? The brisket brought me back home after one bite and the sausage was amazing. I then tried the Texas brisket candy and now I really need to go back home and get some of these right out of the smoker.
