Available as 5 lb. whole salmon side or three 1 lb. vacuum-sealed bags containing two 8 oz. filets.  We start with a whole, fresh Atlantic salmon, season it with our freshly-ground citrus zest (house-made from dehydrated lemon and lime), then gently smoke it to perfection.

Citrus Glazed Salmon

As a former fine-dining chef, Tim is always looking for ways to go beyond traditional BBQ while also offering a balanced menu so he knew he wanted smoked salmon on his everyday menu.  So, he looked at the various styles of cooking salmon and figured out how he could use his smoke and a unique rub to make Crossbuck's salmon its own – a blend of fresh Atlantic salmon with Pacific Northwest influences and a Texas twist.

He started by butchering the fish, from whole, all the way down to each piece in order to offer a fresher, nicer product. He then applied a rub of salt, sugar, spices and a freshly-ground citrus zest, house-made from dehydrated lemon and lime.  From here, it is marinated in lemon juice and sent into the smoker.Finally, to give Crossbuck’s salmon a “Texas twist,” its smoked it in our custom-built offset smokers using our distinctive blend of post oak, hickory and fruit wood

Includes: 

    • Six 8 oz. filets
    • Whole 5 lb. salmon

 

The two filets and whole salmon will come packed in vacuum sealed bags that lock in flavor. 

Shipping Info

    • The vacuum sealed packages are wrapped in butcher paper, surrounded by ice packs and placed in boxes with insulated liners.
    • To avoid the risks of the meats sitting in a warehouse over the weekend, we ship Monday - Tuesday and typically process orders within 1 business day. 

Heating:

Note: Do not puncture or open vacuum sealed packaging. Meat will be heated in packaging.

1-2 lb. Packages

  1. Preheat oven to 350 degrees
  2. Put 1-2 packages in a baking dish (baking dish should be filled with 2 inches of water with packages)
  3. Loosely cover with foil
  4. Heat for 30-45 minutes or until an internal temperature of 165 degrees is reached
  5. Remove from oven, uncover, and remove the bag (very carefully) from the pan
  6. Allow the product to rest for 5 minutes*
  7. Open Bag and Enjoy!

3-7 lb. Packages

  1. Preheat oven to 350 degrees
  2. Put package in a baking dish (baking dish should be filled with 2 inches of water with packages)
  3. Loosely cover with foil
  4. Heat for 60-75 minutes or until an internal temperature of 165 degrees is reached
  5. Remove from oven, uncover, and remove the bag (very carefully) from the pan
  6. Allow the product to rest for 15 minutes
  7. Open Bag and Enjoy!

 

Storage:

Items need to go into either the fridge to thaw for consumption within 7 days or into the freezer for up to 9 months.
